Pat's Cheesecake
This is my cousin Pat's recipe for cheesecake - it's wonderful.
4-8 oz. packages of cream cheese
2 c. sugar
1 1/3 c. sour cream
8 eggs
1 t. lemon juice
pinch of salt
Crust
1 2/3 c. graham cracker crumbs
1/4 c. sugar
1/4 c. shortening
Whip cream cheese until foamy. Add sour cream, sugar, eggs and lemon juice and whip until very fluffy. In separate bowl, mix crust ingredients with fork until well blended. Line 10" springform pan with crust mixture. Pour cake mixture into pan. Bake at 350F for 1 hour and at 300F for an additional 30 minutes. Remove from oven at once and cool.
