Beer and Cheese Soup
My family loves this recipe - it's a great winter soup.
1 c. diced celery
1 c. diced carrots
1 c. diced mushrooms
3/4 c. butter
1/2 c. flour
1 t. dry mustard
5 c. chicken broth
1 bunch of broccoli
11 oz. beer
6 oz. grated cheddar cheese
2 T. grated parmesan cheese
salt and pepper
Saute diced vegetables in butter in large soup pot. Mix flour and mustard in. Add broth. Cook for 5 minutes. Cut up broccoli, steam and set aside. Add beer and cheeses to soup pot. Simmer 15 minutes. Place a portion of the steamed broccoli in each serving bowl and pour soup over broccoli.
