Margo's Mushroom Soup

I love this recipe - I almost always make it on either Christmas Eve or New Year's Eve.

3 T. oil
1 onion, chopped fine
4 stalks celery, chopped
3 carrots, chopped
1 lb. mushrooms, sliced
3 T. flour
1 pt. sour cream
1 c. milk
2-3 quarts chicken broth
salt
paprika

Steam oil, onion, celery and carrots together with salt and 2-3 T. water until soft. Add mushrooms and saute 2 minutes more. Sprinkle with paprika. Add broth and simmer. Combine flour, sour cream and milk and add slowly. Simmer 5 minutes until thickened.
