Cajun Style Orange Roughy

1-14 1/2 oz. can stewed tomatoes
1 celery stalk, chopped
1 small onion, chopped
1 clove garlic, minced
1/4 medium green pepper, chopped
1/2 bay leaf
1/4 t. ground thyme
1/2 t. pepper
dash salt
6 filets orange roughy
2 T melted butter
2 T. chopped parsley

In saucepan over medium heat, combine all ingredients except last 3 (fish, butter and parsley). Bring to a boil; lower heat and simmer. Simmer until vegetables are cooked and sauce reduces - about 20 minutes. This can be refrigerated until ready to serve and then reheated. Preheat oven to 425F. Place fillets in a shallow baking pan and brush with butter. Bake 8-12 minutes. Place on serving tray. Remove baby leaf from sauce. Spoon heated sauce over fillets and sprinkle with chopped parsley. Serves 6.
