Cranberry Bread
I make this at Christmas time and give it to my neighbors on a holiday plate with other goodies.
1 lb. fresh cranberries
1-6 oz. can defrosted orange juice concentrate
2 c. sugar
4 c. sifted flour
2 t. baking soda
1/2 t. salt
2T. melted butter
2 eggs, beaten
2 t. vanilla
1 c. chopped nuts
Cut cranberries in half and mix with orange juice concentrate and sugar. Let stand at least 2 hours, mixing occasionally. Mix dry ingredients in separate large bowl. Add butter, eggs, vanilla and walnuts to cranberry mixture. Add mixture to dry ingredients and mix until blended. our into 2 greased and floured 9x5" loaf pans. Cover with aluminum foil and bake at 350F for 20 minutes. Remove foil and bake 50-60 minutes more.
