Pumpkin Bread
1 c. oil
2/3 c. water
4 eggs, beaten
1-16 oz. can pumpkin
1 c. raisins
1 c. walnuts, chopped
3 1/3 c. flour
2 T. flour
3 c. sugar
2 t. baking soda
1 1/2 t. salt
1 t. cinnamon
1 t. nutmeg
Preheat oven to 325F. Grease 2 9x5" loaf pans Mix oil, water, eggs and pumpkin together. Then, in plastic ziploc bag, mix raisins, walnuts and 2 T. flour together and shake. In large bowl, combine remaining flour, raisin mixture and pumpkin mixture. Add spices and stir. Pour into pans and bake for 1 1/2 hours. (Note: For muffins, use muffin pans and heat oven to 325F baking for only 35-40 minutes.)
