Zucchini Bread

I make this at Christmas time and give it to my neighbors on a holiday plate with other goodies. (Before I put my son on a gluten-free diet, this bread was one of the only ways I could get a vegetable into my toddler - he loved it!)

3 eggs, beaten frothy
2 cups sugar
1 cup vegetable oil
1 tablespoon vanilla
2 cups zucchini, coarsely grated
2 cups flour
1 tablespoon cinnamon
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup walnuts -- chopped

Beat together eggs, sugar, oil, and vanilla. Heat mixture until thick and lemon colored. Stir in zucchini and flour which has been sifted with the rest of the other dry ingredients. Fold in nuts and pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour. Cool in pans 10 minutes and turn onto racks. Makes2 loaves.
