Baked Spaghetti

This is a really simple recipe that can be prepared vegetarian, if you choose. If you do decide to use meat, however, you might want to substitute 1 lb. spicy sausage for the ground beef. (That was the hubby's idea!)

1 c. chopped onion
1 c. chopped green pepper
1 T. butter
1-28 oz. can tomatoes with liquid
1-4 oz. can sliced ripe olives, drained and sliced
2 t. dry oregano
1 lb. ground beef, browned (optional)
12 oz. spaghetti, cooked
2 c. shredded cheddar cheese
1 can cream of mushroom soup
1/4 c. water
1/4 c. grated parmesan cheese

In skillet, saute onion and green pepper in butter until tender. Add tomatoes, mushrooms, olives, oregano and ground beef (optional). Simmer 10 minutes. Place half of cooked spaghetti in a greased 13x9x2" dish. Top with half of vegetable mixture. Sprinkle with 1 c. cheddar cheese. Repeat layers. Mix soup and water together and pour over top. Sprinkle with parmesan cheese and bake at 350F for 30-35 minutes.
