BBQ Salmon

1 3-4 pound salmon fillet
1 t. each black pepper and minced garlic
1 c. finely chopped onion
1 T. minced garlic
1/4 c. soy sauce
1/4 c. mirin or white wine
2 T. brown sugar
4 T. butter
4 T. olive oil

Rinse salmon with water and pat dry. Rub fillet with pepper and 1 t. garlic. Make a tin foil boat to hold salmon with sides at least 1/2" high. In small saucepan, over medium heat, saute onion with butter and garlic and cook until just brown. Add brown sugar, soy sauce and wine. Reduce heat and cook 5 minutes until thickened. Pour hot sauce over salmon in boat and let sit at room temperature 30-60 minutes. BBQ in boat 15 minutes - don't overcook.
