Peanut Brittle

This is an easy microwave recipe. I started making it a few years ago for neighbors and even some online friends at Christmas-time (it "travels" through the mail well!). I had to mess with the cooking time to get it so that the mixture did not burn. The original recipe said to cook it on high for 4 minutes the first two times and then for 2 minutes at the end. I have found that the times below work better with my microwave (otherwise the mixture burns).

1 c. spanish peanuts
1 c. white sugar
1/2 c. light corn syrup
1 T. butter
1/2 t. vanilla extract
1/8 t. salt
1/2 t. baking soda

Mix the first 3 ingredients together in a large bowl. Microwave for 3 minutes on high. Remove and stir again. Microwave for another 3 minutes and remove. Add the butter, vanilla extract and salt and microwave 2 more minutes. Add the baking soda and stir rapidly. Immediately pour into a buttered 9x13" pan and allow to cool. When hardened, break into pieces.
