Beef and Noodles

1/2 lb. package fine noodles (in oriental food section)
3 T. oil
1 lb. ground beef
1 t. salt
1/2 t. pepper
1 minced garlic clove
1 c. bean sprouts
1 T. sugar
1 c. beef broth
2 t. cornstarch
2 T. water
1/4 c. sliced scallions

Cook noodles per package directions. Drain and rinse under cold water. Drain well and chill. Heat oil in deep skillet and brown meat, stirring frequently to prevent lumps. Add salt, pepper, garlic, bean sprouts, sugar and broth. Bring to boil. Mix together cornstarch and water and stir into skillet until thickened. Mix in noodles and heat through. Serve with scallions sprinkled on top.
